Question about IWADs
Are there any mods out there that will run on DOOM v1.9, but not The Ultimate DOOM?

The Lost Episodes of Doom will run just fine, you'll just get some ugly text superposition on the episode selection menu and that's all. The menu will still work and this has no effect on how the levels actually run.
By asking specifically about stuff that will run on v1.9, you also disqualify Doomsday of UAC which was broken by a behavior change.
Basically it's not possible for a PWAD to be broken just by the presence of additional map lumps in the IWAD, except contrived cases where you use some advanced port specific features just to make it break in these conditions.

Basically what I'm asking is are there any mods that SPECIFICALLY request that you use v1.9, or that generally work better in v1.9 than Ultimate DOOM?

Such a request would be technically baseless. The worst thing that can happen is a ugly but nevertheless functional episode selection menu.

But most mods don't have that sort of problem, right? [EDIT: If it sounds like I'm asking really stupid questions, that might be because I am. I just want to get this settled.]

Most mods do not give the third episode title a picture sensibly taller than 15 pixels, no.

Question about .deh files
Alright, this is sort of off-topic, but I made this thread, no one has used it in days, and I don't think this "issue" really warrants it's own thread: I've been running DOOM The Way id Did through GZDoom without using the included .deh files. When I compared that to using it with said files, I noticed absolutely no differences whatsoever. Does it even do anything, or should I just throw it in the recycle bin? (For the record, I'm not asking what a .deh file DOES, I'm asking if I need it for anything.)

All that the DTWID DEH file does is change the level names (e.g. E1M1 is changed from "Hangar" to "Comm Bridge") and DTWID.wad already contains an embedded DEHACKED lump that does the same thing (but with longer names as it uses BEX strings which aren't limited like DEH strings are, so E1M1 can be "Communications Bridge").
Basically the external deh file is there only for people who play with Chocolate Doom or want to patch the vanilla Doom exe.

Another random tangent.
So recently I downloaded UAC Ultra, and I had a lot of fun. Then I learned that a texture pack existed for it, so I downloaded that too. However, when I ran the two of them together, I noticed literally no difference. Is this a case where the texture pack was incorporated into the main mod or am I just missing something here? For the record, I am still using GZDoom.

The separate texture pack is a modder's resource, for people who'd want to make levels using the textures made for the mod. It's not needed to play the mod.
