Take for example my map, Technophobia Overdose.

), i think that it covers pretty much what i've learnt so far and what i'm able to do. And the map itself isn't so full of ZDoom features. Just some fancy scripting here and there and some polyobjects, nothing more. For the rest, it's just a basical map, that a lot of people have found it to be funny to play.
Just to be clear enough, i don't cover every facet of Doom editing, too. I still have to get used to SBARINFO and other lumps as well.
Remember, to create a good wad, not always the visual effects and fancy features count much. Gameplay counts a lot. That's my advice, Sagittaire.
