Looks like the 5930K trounces the 4790K overall because it's a newer platform, but the 4790K has a higher clock speed. The higher speed will be better for more CPU-limited programs. I don't know if Skyrim/Fallout are CPU-bottlenecked, you may want to research that. For ZDoom, both are massive overkill and should work fine.

I seriously wonder if a 6 core CPU has any genuine use. Quad core should be more than sufficient for the vast majority of use cases - even games. And there, I'd guess, the single core speed is also an important factor. 6 cores only make sense with software that makes truly perfect use of multithreading.
In this case I'd go for the 4790.

I'd go for the i7-4790K as well, because it only uses 88W power, compared to the 140W power hungry i7-5930K.

A Haswell-E CPU is only ever going to be useful to you if you do heavy-duty CPU tasks, like video/image/3D editing/sculpting.
If you just want to play bideogames then a 4790k is going to be more than enough, and if it for some reason isn't, you can always slap a nice CPU cooler onto it and give it a nice little +1 Ghz overclock.
And even then, you're still not going to miss out on much, since a 4790k is still a very stronk CPU - just not TOP "portable radiator" DAWG
