Looking for a SLADE PK3/ZDoom "example project"

I am trying to get into zdoom modding but I am REALLY struggling.
I am looking for someone else's already complete package to study to see the right way to implement things. Stuff like adding new monsters/weapons through a pk3.
I can't find any good recent up to date tutorials for adding zscript weapons and monsters through a pk3 file, there's lots of 6-8yr old tutorials that dont seem to reflect current zdoom. I am following LazyGamer's Let's learn PK3 files', but they never -test- their maps in the videos, and im doing exactly what they're saying but in-game everything is broken (a 6 year old tutorial)
I cant find anything more up to date than this though, documentation is sparse to nonexistent as far as I can find
What the difference between baking your assets into the WAD file with slade vs. trying to include the assets as a PK3?
I want to use PK3s because they seem easier to manage tons of new custom content, but I cant figure out how to get the game to see and use the content in the PK3 even when the resource is added as a resource through UDB
so many other people have figured this stuff out before me though, so I just feel like I must be really stupid to not be able to get any of this...
