Okay - reproducing this bug is simple.
Load up Exhumed, start a new game. Save the game to a new slot. Quit Raze, restart Exhumed, load the save. The red health bar (and the blue mana bar, if you had any) will appear empty until their values change. This does not affect the numbers on the full-screen HUD; it only affects the liquid bars on the status bar. Changing screen sizes does not reset the bars - only taking damage or healing fixes them.

Sadly, Exhumed's status bar is quite a mess. It probably needs to be rewritten to actually represent the current game state, not some local copy of it.
