How can I pull this off? In standard DOOM 2 format, the monster has very few options in GZDB. I want its defeat to end the level, or alternatively, its defeat allow a door to open to the exit or something similar.

If there's only one monster you need to kill and any map it appears in is ended by its death, you can use DeHackEd to make its final Death state call A_BrainDie.
Alternatively, you can do the same with A_KeenDie and block the exit off by an unopenable door tagged 666, or if your map is MAP07 you can use A_BossDeath instead and replace the mancubus or arachnotron and block the exit appropriately.
If none of these work, you'll just need to target ZDoom. Or possibly Eternity or 3DGE, as I would be surprised if they don't have a way to do this more elegantly but I don't actually know if they do or not.
