I can suggest a "Combatant Warfare" (that is kinda fork of "DoomLess" or something like that), where most of enemies is humans.

Also mine "Delta Force Doom" has standalone enemy pack with only humans in it!

Kind of surprised no one posted this ( I'm just now coming across it myself to be honest :P ) but I think MMDoom: Might & Magic monster replacer should probably be added to the list. :D

Yes, this one is awesome. They even update brand-new zombie sprites to make it more unique looking.

Should make you guys of aware of this impressive Touhou-themed monster wad from the lead dev behind Project Malice that add the fairies as enemies.

Most interesting is that it doesn't actually replace any monsters, but rather acts as a "supplement", meaning they'll spawn in with standard enemies and is compatible with other monster mods as well :P
