I just stumbled upon the demo of this canceled FPS game called Retroblazer...
It's built with the darkplaces engine, an enhanced version of the Quake 1 engine.
The interesting thing are 2D enemy/weapon/item sprites and that special retro look:

Wouldn't this be perfect as the base for some sort of Doom remake/mod project?
A true 3D engine with classic Doom sprites, sounds pretty good to me. Cheers!

An actual example of how it works out, Doom sprites in a true 3D polygon engine, is this Half-Life "mod for a mod":
