It might not be fully supported, but if you don't mind not having control over the bar that is drawn, you can revert to the default startup type in IWADINFO, then just use a graphic named BOOTLOGO and it'll replace the GZDoom logo in the default. Supports high resolution. Don't know if it's not being advertised because it might change, or what.
EDIT: OK, never mind, this doesn't fix your problem... The image still basically gets resized to draw at 4:3 aspect ratio and still clips on the sides.
