Save Game Location Confusion

Contrary to popular belief, we are not all-knowing-all-seeing magical beings!
If you want help you're going to have to provide lots of info. Like what is your hardware, what is your operating system, what version of GZDoom/LZDoom/whatever you're using, what mods you're loading, how you're loading it, what you've already tried for fixing the problem, and anything else that is even remotely relevant to the problem.
We can't magically figure out what it is if you're going to be vague, and if we feel like you're just wasting our time with guessing games we will act like that's what you're really doing and won't help you.

Save Game Location Confusion
I deleted the Gzdoom stuff in the documents folder, but when I launch Gzdoom the files are still there.

Unfortunately you do not tell us which version of GZDoom you want to uninstall.
Up to and including the 4.8 versions, all files are installed in the GZDoom folder of your choosing.
From the 4.9 versions onward the system files are installed in a folder of your choosing, but the ini file is generated in a Windows location. The easiest way to find the ini file is to run GZDoom and type at the console whereisini.
Unless you have installed a gzdoom_portable.ini file in the GZDoom folder.
Thusly, uninstall the GZDoom folder and whichever ini file was generated.
