Depends from a lot of factors. Like am I stuck in game, debugging it in MVS, try to cheat using cheat engine, watch(listen) to some youtube video about nonstandard calculus, etc.
But currently windowed. Because I have a craptop and, thank to miners and worldwide Mexican beer advertising, Im unable to upgrade even to to what counts as low specs system nowadays. Send help pls
Where connection? Smaller window -> video card have less pixels to render -> performance -> ????? -> crysis on half dead radeon and celeron.

GZDoom/LZDoom games >>> Fullscreen.
Emulated retro games >>> Windowed.
Other non-standard games >>> Depends on case.

Borderless fullscreen all the way. I like being able to immerse myself in a game but also I like to chat with people and being able to bounce out then back in in under a second is important to me. Usually it's better if the audio doesn't mute itself too, because if I'm tabbing back and forth in a cutscene or something with very little interaction I don't want it to get interrupted.

Borderless fullscreen on almost everything because I have three monitors.
Sound/music depends on if I'm listening for sound cues from any program running (i.e. idling in an MMO or somesuch) or just want to listen to any ambience.

Fullscreen with sound still going when alt-tabbing - not that I alt-tab out of games very often. Only exception to this is any Doom source port that isn't GZDoom, which I tend to run in windowed mode. Mostly due to Win10 not being very compatible with software-rendered Doom source ports running in fullscreen, at least in my experience.

Windowed, for sure. I never enjoyed playing games on Fullscreen because haha fps go [fart with reverb]

Full-screen if possible. Not only I can pay more attention on it, but I can also record it easier. When hard ripping, fullscreen is paramount.
Also, in earlier operating systems, I learnt that certain games loved to crash when put into windowed mode.

I remember back in the day when me and my brother were taking turns playing Worms World Party, and occasionally hitting the windows key on accident which caused the game to not just minimize but unable to tab back in and all you could do is kill it with task manager.
