I would like to play the game in the original resolution but expanded to widescreen. E.g. something around 360x200 stretched to 360x240
The option for 360x200 in zDoom scales weirdly and makes the face look derpy

I would settle even for a 4:3 320x200 stretched to 320x240 resolution, but there is no 320x200 option and the offered 320x240 renders a full 240px high image instead of stretching the 200px to create the iconic long vertical pixels, resulting in stuff like squished HUD face.

I am using ZDoom v2.8.1. Don't recommend me to upgrade to GZDoom please, I have tried GZDoom and I do not like it and ran into many issues with it. Just help me fix the resolution issue.

If you want help you're going to have to provide lots of info. Like what is your hardware, what is your operating system, what version of GZDoom/LZDoom/whatever you're using, what mods you're loading, how you're loading it, what you've already tried for fixing the problem, and anything else that is even remotely relevant to the problem.
We can't magically figure out what it is if you're going to be vague, and if we feel like you're just wasting our time with guessing games we will act like that's what you're really doing and won't help you.

Original resolution scales poorly
I'm on ZDoom v2.8.1 and the low resolutions don't appear right.
I would like the original 200 pixels high resolution stretched to 240 high to get the long vertical pixels, but extended in width to widescreen if possible. But all my efforts either look derpy, or squish the graphics into square pixels.

Unfortunately, your options for addressing the issues are going to be extremely limited then, because GZDoom has a far more robust scaling system that does exactly what you want. That being said, ZDoom has a vid_aspect option, you can try tweaking that from the console. AFAIR it has 6 options. Try them out and see what happens.

320x200 with aspect of 4:3 makes the game render right but the hud bar is still derpy.
