I want to change the directory saved games (ZDS files) are located. Currently they are:
/Users/My.iMac/Documents/GZDoom/Savegames/
Is there anyway to get (G)ZDoom to look for them somewhere else?

Yes, with the [wiki=CVARs:Configuration#save_dir]save_dir[/wiki] console variable.
