You can't. All you can do is alter the flow of time, but you can't go backwards in time, so using GZDoom as a speed running port is kind of pointless. GZDoom is missing nearly all the features needed to make it a viable TAS port. Most importantly, it does not have in-demo joining.

Here is an example of doing just that. I recorded a demo of MAP01 playing the Hideous Destructor tactical realism mod, with the game running at 1/4th speed using the console command i_timescale 0.25. Once the demo was successfully recorded, I played it back at full speed and recorded the output with OBS.
