So this is possible with 3 Screens...Theory: If you use an FOV of 360 with 8 Screens around you, and you turn around IRL, you see what's behind Doomguy in the game. Would that work?

I don't think a 360 FOV is technically possible with the projection used. I know GZDoom caps the FOV at 180.
You'd be better off rendering other views with their own FOV for the other monitors I think.

It was a special case of netgame. You could run Doom in networked mode on three different computers at once, with the main computer showing the front view and the other two showing the left and right views.

The three-monitor mode from vanilla Doom didn't survive long. It does not exist in source ports unless specifically recreated, like in Chocolate Doom.
The ZDoom screenshot above shows that it's a single render, so it requires only a single computer -- but you need to have three monitors plugged on the same computer, and let the OS present them to the apps as a single superwide monitor.
