There just can't be any performance improvement options because 90% of the framerate draining stuff is the map itself, which no amount of CVAR options can fix.

As far as my admittedly-limited knowledge goes, it's not possible to change the scoreboard in a Zandronum-compatible way. I'm fairly sure it's hardcoded.

Which is a shame, because even just the ability to manually add Kills/Frags to a player's properties would solve the issue entirely.

The mod ZSRB2 did it and it's compatible with Zandro, you should try looking at it

Height, movement speed, sounds, state behaviors, etc. All very minor stuff, but just enough to have a single player class with separate skins be a pain.

Ideally, another set of courses, maybe one or two more characters.
I had an idea for a "Super shot" system in which every character could have a special move that had the ball behave differently for one single shot, but it turned out to be more difficult in implementation than expected, so I scrapped it. Adding on to that, I couldn't really think of unique abilities for every single character--most of them were easy, but after a while I'd pretty much run out of possible feasible effects I could think of and still had a couple characters left over.

i doubt it, but is anyone making any maps for this/are new maps planned for any reason or is it more of a one-shot thing?

Ideally, yes.
The question is really just a matter of time allowing me. I'm not a good mapper and my mapping is slow, slow, slow, ahah.

A couple others have submitted additional maps for this, and I'm certainly open for contributions, but mapping for golf is slightly more difficult than you'd expect so I don't expect the mass deluge of maps there were for Push. I'll be surprised if I get maybe five contributions.

do you suppose you could link these additional maps?

EDIT: as a suggestion, the player color should affect the color of their ball and flight trail.

The extra maps are included for v2 of Hellshots Golf, they weren't released as add-ons.

Also that's an interesting idea, I'll experiment with it, thank you.
