-Zbrush for modeling, painting base colors, basic lighting and posing. -Zbrush Plugin - Turntable to generate a movie file with 8 rotations.
-Rip turntable movie frames for the 8 images per rotation.
-Bring images into Photoshop or Sai to paint and finalize colors and large details.
-Downscale appropriately for Doom, and bring sprite sheet into MS paint for final detailing touches.
As to why I'm doing why I'm doing what I'm doing, I don't really have a set process as of yet. Still in the learning and experimenting phase, personally.
