I have a intetion to build more open areas like forests or meadows but I worry if I place to many sprites in the level it will lost performance. Is there a way to implement for example some sort of a LOD system to have a sprites in a much lower quality when you are observing them from afar? Or any onther solution?

Give them the NOINTERACTION flag if they don't need collision.
Use can also, if using zscript, write a custom override Tick() that doesnt't have as much overhead.

well trees, statues and such have collision but I didn't set any for the grass, flowers, etc does that NOINTERACTION will do anything if the object doesn't have any collision at all? And I am not very familiar with zscript tbh
