The HUD is completely mod accessible via ZScript, in fact the entire thing is ZScript. It wouldn't take much to add something like this, but while the team is small this is unlikely something we'd take on with any kind of priority as we work on bigger items.

I fully agree with Shockwave. Small non invasive all ammo hud to the right should be good!

It surely is doable me thinks, but I am honestly not seeing this as beneficial as it will clutter important screen space that can negatively affect the experience.

Ammo for the current weapon, armor, health, inventory items, and keys sounds enough to me.

Regarding the fullscreen HUDs for all supported games (one notch below "HUDless fullscreen"), is it possible to display munitions count for all currently-held weapons, not unlike how the vanilla HUDs display it all in one place? In addition, is it also possible to show energy/munitions for all currently-held inventory items?
