Doom3 isn't as good as Doom I/II and harder to mod.

If you want good graphics, use Doom3.

To make this readable: for graphics, play, jDoom, for features play ZDoom (this does not reflect my own opinion.

if U wan't GOOD graphics get jdoom, but it doesn't support doom in Hexen format (boom) but it has models, dynamic lighting, high quality textures and music and other cool stuff.

You need a true color display to handle this. Currently ZDoom doesn't support that.

But how about the thing I mentioned: one palette file for one texture? Unreal uses it as well, maybe it could be possible (or more unpossible)...

That's not true. It certainly is possible. The problem here is the amount of stuff that is difficult to modify because it's an integral part of the engine.
